I Feel Like My Candied Peel


Tired! Here are some photos of Ballycotton, the nearby seaside town to satiate you while I catch my breath. I did part of a cliff walk there recently.

I feel like my candied peel, a three day recipe I just finished today that involves working the life out of orange and lemon peels (salting, soaking for 24 hours, sugaring, boiling until they’re translucent).. Also, this morning I made an olive tapenade appetizer with crositini, baked my first soda bread, made a lemon meringue pie (which includes making the pastry, the lemon curd (yum!) and the meringue. A whirlwind three hours.

Question now is… am I translucent? Thoughts? Anyone, anyone?
